Ingredients
500g minced beef
1 tbsp red curry paste
25g fresh white breadcrumbs
2 tbsp freshly chopped coriander
1 egg lightly beaten.
1 tablespoon light soy sauce
Black pepper
French sticks
Lettuce, shredded
Sweet chilli sauce
Method
1. Put beef in a bowl and stir in red curry, bread crumbs, coriander, egg, soy sauce & pepper.
2. Mix with your hands, shape into 8 mini burger patties.
3. Heat a ridged pan until very hot, add patties and cook 4-5 minutes, until charred and cooked through.
Serve each burger in French sticks with lettuce and sweet chilli sauce.

Ingredients
6 skinless chicken thigh fillets
1 tbsp extra virgin olive oil
Grated rind and juice of 1 lemon
1 clove crushed garlic
1 tbsp cumin
4 flour tortillas
200g hommus
25g wild rocket leaves
1 handful parsley leaves
Salt and pepper
Method
1. Cut chicken into quarters and put in bowl.
2. Combine oil, lemon rind ,garlic, cumin, salt & pepper. Add chicken and stir well.
3. Heat ridged pan until hot. Thread chicken onto metal skewers add to pan or BBQ and cook for 4-5 minutes.
4. Heat tortillas in pan/oven or wrapped on the BBQ for 5 minutes
5. Remove chicken from skewers, divide hommus, rocket leaves, parsley & chicken between tortillas.
Squeeze over lemon juice, wrap and serve.
